Vietnamese Recipe : Lemongrass Chicken Noodle Salad

Ingredients:

  • 200g chicken breast, sliced
  • 1 stalk lemongrass, chopped
  • 1 clove garlic, finely chopped
  • 1 tsp fish sauce
  • 1 tsp sugar
  • ¼ tsp salt
  • ¼ tsp chilli flakes/powder
  • 50g rice vermicelli, soaked, blanched and drained
  • 100g cucumber, shredded
  • 20g beansprouts
  • 10g mint

Dressing:

Directions:

  1. Marinate the chicken breast with lemongrass, garlic, fish sauce, sugar, salt and chilli flakes for about 30 minutes.
  2. Skewer the meat onto satay sticks and grill until cooked.
  3. Serve on a bed of vegetables and vermicelli with a dressing of Fish Dipping Sauce.
