Malaysian Recipe : Yam Duck

Cooking time: 1 hr
Serves: 6
Ingredients:
- 2 kg duck, cleaned and cut into 8 pieces
- 1 ½ kg yam, cut into large wedges
- 100g young ginger, sliced
- 1 tbsp chopped garlic
- ¼ cup oil
- 1 pc salted fermented soy (nam yee)
- 2 tbsp salted soy beans (tau cheong)
- 400ml water
Seasoning:
- 2 tbsp oyster sauce
- 1 tbsp sesame oil
- 1 tsp sugar
- ½ tsp pepper
Spices:
- 1 pc cinnamon stick, about 5 cm long
- 2 star anise
- 2 cloves
Directions:
- Heat the oil in a Dutch Oven. Fry ginger and garlic till its soft.
- Next, add the salted fermented soy and salted soy beans and fry until aromatic.
- Add the duck and keep on stir-frying until well coated with spices.
- Pour in 400ml of water and allow to cook on low heat till meat is quite tender. Add in the yam and simmer till it is soft.
- Add in seasoning. Stir and dish-up.
- Garnish with spring onions and Chinese celery. Serve hot.
