Malaysian Recipe : Yam Duck

Preparation time: 30 mins
Cooking time: 1 hr
Serves: 6


  • 2 kg duck, cleaned and cut into 8 pieces
  • 1 ½ kg yam, cut into large wedges
  • 100g young ginger, sliced
  • 1 tbsp chopped garlic
  • ¼ cup oil
  • 1 pc salted fermented soy (nam yee)
  • 2 tbsp salted soy beans (tau cheong)
  • 400ml water


  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • ½ tsp pepper


  • 1 pc cinnamon stick, about 5 cm long
  • 2 star anise
  • 2 cloves


  1. Heat the oil in a Dutch Oven. Fry ginger and garlic till its soft.
  2. Next, add the salted fermented soy and salted soy beans and fry until aromatic.
  3. Add the duck and keep on stir-frying until well coated with spices.
  4. Pour in 400ml of water and allow to cook on low heat till meat is quite tender. Add in the yam and simmer till it is soft.
  5. Add in seasoning. Stir and dish-up.
  6. Garnish with spring onions and Chinese celery. Serve hot.
