Chinese Recipe : Stir Fried Beef with Bean Sprouts and Broccoli

Serves 4
Ingredients:
- 1 lb. flank or round steak
- 1/4 c. soy sauce
- 1 tbsp. cornstarch
- 1 tbsp. dry sherry
- 1 tsp. sugar
- 1 clove garlic
- 1/2 bunch broccoli
- 1 1/2 c. fresh bean sprouts
- 5 tbsp. vegetable oil
- 1 slice ginger root
- 1/4 c. sliced green onion
Directions:
- Cut beef across grain, 1/4 inch slices, 1 inch long. Mix beef with next 5 ingredients and set aside.
- Cut broccoli tops into flowerets, 1 to 2 inches longer, 1/2 inch thick.
- Put 2 tbsp. oil in hot wok, high heat. Add broccoli and stir-fry 2 minutes; remove and keep warm.
- Add remaining oil to skillet, then add ginger root and sliced green onion. Stir in beef mixture and stir-fry 2 minutes or until almost done.
- Add broccoli and bean sprouts and mix lightly. Serve at once with boiled white rice and/or dry Chinese noodles.
