Chinese Recipe : Black Glutinuous Rice Cake with Cocounut Juice

Ingredients:
- 2 1/2 oz black glutinous rice
- 10 1/2 oz granulated sugar
- 2 oz granular gelatin (unflavored)
- 1 can coconut juice
- 21 oz water and 21 oz ice block
Directions:
- Wash the black glutinous rice to remove dirts. Steam for 40 minutes. Rinse under water and drain well. (P.S. if u have one of those microwavable plastic container that people used especially for steaming, then you can reduce the time from 40 mins to 15 to 20 mins, depending on your microwave).
- Mix the sugar & granular gelatin well. Add water & bring to boil. Remove from heat and pour in coconut juice. Finally add ice blocks and rice.
- Pour (2) into a rectangular basin. Refrigerate until solidifies.
