Chinese Recipe : Coconut Red Bean Pudding

Ingredients:

  • 11oz (400g) red beans (red mung beans)
  • 1 1/2 cups sugar
  • 1 1/4 cups coconut milk
  • 3/4 cup condensed, unsweetened milk
  • 7 oz (200g) corn starch
  • 4 Tbsp high-gluten flour

Directions:

  1. Wash beans, soak with plenty of cold water for 2 hours, boil until soft, drain and set aside.
  2. Moisten inside of pudding-cups with water to use as molds.
  3. Mix coconut milk, condensed milk, corn starch, and flour with a blender.
  4. Add sugar to 5 cups of water and bring to a boil. Add milk-flour mixture and keep stirring until boiling.
  5. Add beans and bring to a boil again.
  6. Pour into pudding-cups. Refrigerate when cool. Serve when pudding hardens.
