Chinese Recipe : Rice Rolls with Egg and Sweet Bean Paste

Ingredients:

• 300g sticky-rice flour (2/3lb)
• 1 can coconut milk (small)
• 2 Tbsp corn oil
• 2 Tbsp condensed milk
• 2 Tbsp high-gluten flour
• 200g sweet red-bean sauce (available in cans)
• 4 salted eggs --- discard egg-white
• 1 can evaporated milk (small)
• dash of coconut shreds
• 1/3 cup water

Directions:

1. Steam salted egg-yolks until cooked, crush or chop into a pulp.
2. Mix and sieve the two types of flour on a plate, add coconut milk, oil, condensed milk, and evaporated milk, mix them into a soft dough, steam for 15 minutes till cooked.
3. When cool, sprinkle flour all over the cooked-dough.
4. Roll flat into a square dough. Spread sweet bean paste and egg-yolks evenly near one edge.
5. Roll dough into a long cylinder, cut into small pieces, and sprinkle with coconut shreds.
