Chinese Recipe : Shredded Pork with Egg (Appetizer)

This is an Eastern Chinese recipe

Ingredients:

• 4 eggs
• Pinch of salt
• ¼ cup lard
• ¼ lb pork tenderloin, shredded
• 1 tbsp dry sherry
• 1 tbsp soy sauce
• ¼ cup stock

Directions:

1. Beat the eggs with the salt. Melt the lard in a pan. Add the pork and stir fry until lightly browned.
2. Lower the heat, pour the eggs over the pork and stir fry gently until set.
3. Turn the 'omelet' over and break it into small pieces.
4. Add the sherry, soy sauce and stock and continue cooking for about 2 to 3 minutes. Serve hot as an appetizer.
