Chinese Recipe : Shredded Pork with Egg (Appetizer)

This is an Eastern Chinese recipe
Ingredients:
- 4 eggs
- Pinch of salt
- ¼ cup lard
- ¼ lb pork tenderloin, shredded
- 1 tbsp dry sherry
- 1 tbsp soy sauce
- ¼ cup stock
Directions:
- Beat the eggs with the salt. Melt the lard in a pan. Add the pork and stir fry until lightly browned.
- Lower the heat, pour the eggs over the pork and stir fry gently until set.
- Turn the 'omelet' over and break it into small pieces.
- Add the sherry, soy sauce and stock and continue cooking for about 2 to 3 minutes. Serve hot as an appetizer.
