Chinese Recipe : Sugar Cane and Water Chestnut Beverage
½ lbs water chestnuts
1 lb sugar cane
½ lbs carrots
1 parsley sprigs
8 cups water
Wash and peel the water chestnuts. Refresh and drain.
Section the sugar cane into 12” lengths. Peel, rinse and slice into thin strips. Scrub and slice the carrots. Wash and trim the parsley.
Pour the water into a deep saucepan or casserole and place over medium heat to bring to boil. Add the water chestnuts, sugar cane and carrots and lower the heat to simmer for an hour. Remove the lid, put in the parsley and turn off the heat when the water reboils. Leave the drink aside to cool, then pour into the bottles to store. Chill in the refrigerator and serve cold.
