Famous Authentic Chinese Recipe : Baked Fish Mouths with Bean Sauce
480g big head mouths
8g fermented beans
1 tbsp in total of chili pellets, chopped garlic, chopped ginger and onion pellets
Adequate amount each of salt, sugar, pepper, dark soy sauce and Shaoxing wine
Wash the fish mouths (the part a little below the eyes) clean, halve them, sow salt on, boil oil over medium heat until 80 percent hot, scald the fish mouths in it, take them out and drain oil away.
Heating oil in the pot, put fermented beans, chili pellets, chopped garlic, chopped ginger and onion pellets in to sauté, put the fish mouths in, sprinkle wine in, cover the pot to bake for one minute, season them with salt, sugar, pepper and dark soy sauce and serve them in a plate.
