Chinese Recipe : Braised Salmon with Soy Beans

Ingredients:
- 4 slices fresh salmon, about 1 ½ lbs
- 1 stalk leek, cut into small sections
- 4 slices ginger
- 1 cup soy beans
- 2 tbsp wine
- 3 tbsp soy sauce
- 1 tbsp sugar
- 5 tbsp oil
Directions:
- Soak soy beans overnight. One cup will increase to 2 ½ cups.
- Heat oil and fry fish to light brown on both sides.
- Add leek, ginger, wine, soy sauce, sugar and soy beans.
- Cover with lid and simmer for 15 minutes. Serve either hot or cold.
Note: Salted salmon may be used instead of fresh salmon.
