Famous Authentic Chinese Recipe : Dace Balls with Lettuce

Ingredients:

  • 480g dace black fillet
  • 1 tbsp white scallion pellets
  • A dashed chopped parsley
  • 160g lettuce
  • 2 stalks parsley
  • 1 adequate amount of chrysanthemum petals

Seasonings:

A:

  • 1 tsp salt
  • 1 chicken egg white
  • A dash each of sesame oil and pepper
  • 1 tbsp cornstarch

B:

  • 3 tbsp flour
  • 1 tbsp cornstarch
  • ½ tsp salt
  • 1 tsp baking powder

Directions:

  1. Wash the dace back fillet clean, wipe water away, scrape the fillet with a spoon to mash it, add A ingredients to mix well, stir them forcefully into colloid, add chopped parsley and white scallion pellets, mix them well and knead the mixture into balls by hand.
  2. Wash the lettuce clean leaf by leaf, shred two of them, place them in a plate, trim the other leaves round and soak them in cooled boiled water.
  3. Add water to B ingredients to stir into paste, add 1 tbsp of lard and mix them into crisp coating paste.
  4. Coat the dace balls of (1) all over with the coating paste of (3), put them in the oil going to boil, deep fry them until golden yellow and floating on the surface and scoop them out.
  5. Put the deep fried dace balls in the plate with lettuce shreds, sow chrysanthemum petals and parsley in and serve them together with round lettuce leaves in a saucer.
