Chinese Recipe : Fried Pomfret in Orange Sauce

Ingredients:
- 1 black pomfret, about 500 gm
- 45 gm almond flakes
- ¼ tsp chopped garlic
Marinades:
- ¼ tsp salt
- 1 egg
- 1 tbsp cornflour
- Pinch of pepper
Seasoning:
- ¼ cup orange juice
- ¼ tsp salt
Thickening:
Directions:
- Peel fish skin, clean and drain well. Cut fish meat into 1 square inch. Marinate with marinades for 10 minutes, set aside.
- Heat up oil, stick almond flakes into fish chip and deep fry until golden brown. Dish and drain. Arrange on plate.
- Heat up wok with ½ tbsp of oil, stir fry chopped garlic.
- Stir in seasoning, bring to the boil and pour in cornflour solution, then pour over fish.
