Famous Authentic Chinese Recipe : Fried Yellow Fish with Moss
400g yellow fish fillets
½ white scallion
1 slice ginger
1/3 cup glutinous rice
Adequate amount of crushed moss
1 tbsp wine
¼ tsp salt
½ pot frying peanut oil
Cut the fish fillets into rectangular pieces, mix them well with 1 tbsp of wine, ¼ tsp of salt, chopped white scallion and chopped ginger and stand for about 10 minutes.
Whip chicken egg in a bowl and add water chestnut powder to stir well quickly.
Heat plenty of oil in the pot to medium heat. Put the fish pieces of (1) into the egg juice of (2), take them out, sprinkle moss in the centres of the fish pieces to make bands, then throw them into the hot oil to deep fry them until light yellow, take them out, and when the oil temperature is a little higher, deep fry them again for a while.
Lay the deep-fried fish in a serving plate and eat them by dipping them in tomato sauce and xanthoxylum salt.
