This is an Eastern Chinese recipe
Ingredients:
¼ cup lard
3-4 scallions, finely chopped
2-3 slices ginger root, finely chopped
1 lb cod or halibut fillets, quartered
2 tbsps dry sherry
2 tbsps soy sauce
1 tbsps sugar
½ cup water
1 tbsp cornstarch, dissolved in 1 ½ tbsps water
1 tsp sesame oil
Shredded scallion to garnish
Directions:
1. Melt the lard in a pan over high heat. Add the scallions and ginger and sir-fry for a few seconds. Add the fish pieces and stir gently to separate. Add the sherry and bring to the boil, then stir in the soy sauce, sugar and water. Simmer for about 10 minutes.
2. Add the cornstarch mixture and simmer, stirring, until thickened. Add the sesame seed oil and serve hot, garnished with shredded scallion.
