Chinese Recipe : Teochew-style Steamed Fish

Ingredients:
- 1 Siakap, about 600 g
- 80 g meat, sliced
- 1 soft beancurd
- 80 g salted vegetables, sliced
- 1 tomato, wedged
- 2 preserved wet sour plum, mashed
- ½ tsp chopped garlic
- 5 pcs ginger, shredded
Seasoning:
- ½ tsp light soya sauce
- 1 tsp oyster sauce
- ¼ tsp sugar
- 1/3 tsp salt
- 1 tsp Shaoxing wine
Directions:
- Scale, remove gills and intestines, and dimidiate. Clean and drain. Arrange on a plate.
- Cut beancurd into 4 pieces.
- Heat up wok with 2 tbsp of oil, stir fry ginger shreds and chopped garlic till aromatic, then add in meat, beancurd, salted vegetables, tomato, plums and seasoning, mix well and pour over fish.
- Steam for 9 minutes at high heat. Ready to serve.
