Chinese Recipe : Fried Vermicelli with XO Sauce

Serves 4
Ingredients:
- 600 g vermicelli
- 1/2 onion
- 5 pieces of Chinese mushroom (dried, soaked)
- 150 g fresh pork
Sauce Mix:
- 5 Tablespoons XO Sauce
- 1 Tablespoon Soy Sauce
- 1 teaspoon salt
- 1 Tablespoon water
Directions:
- Blanch vermicelli until loosen in boiling water. Rinse with cold water, drain and set aside.
- Cut pork, Chinese mushroom and onion into shreds.
- Sauté shredded pork in 3 Tablespoons oil until fragrant. Add onion and Chinese mushroom, stir well. Set aside.
- Add vermicelli, pork, onion, mushroom and sauce mix and stir-fry until the sauce dries up.
