Chinese Recipe : Double Stir Fried Pork in Soy Bean Paste (Sauce)

Ingredients:

  • 1 ½ lb lean pork (loin), cut into ¾ inch cubes
  • 3 tbsps oil
  • 1 tbsp hoisin sauce
  • 1 tbsp dry sherry
  • 1 ½ tsps bean sauce
  • 1 tbsps soy sauce
  • 1 tsp sugar
  • 1 tbsp lard
  • 1 tsp cornstarch, dissolved in 3 tbsps stock or water

Directions:

  1. Rub the pork with 1 ½ tbsps of oil. Mix together the hoisin sauce, sherry, soy bean sauce, soy sauce and sugar in a bowl. Heat the remaining oil in a wok or pan over high heat. Add the pork and stir-fry over high heat for 2 minutes. Drain the pork and set aside. Discard the cooking oil from the wok or pan.
  2. Add the lard to the pan and melt over moderate heat. Add the soy bean sauce mixture and stir well. Add the cornstarch mixture and cook, stirring until thickened.
  3. Return the pork to the pan and quick-fry, stirring for 1 minute. Serve hot on a bed of shredded lettuce, if liked.
