Chinese Recipe : Double Stir Fried Pork in Soy Bean Paste (Sauce)

Ingredients:
- 1 ½ lb lean pork (loin), cut into ¾ inch cubes
- 3 tbsps oil
- 1 tbsp hoisin sauce
- 1 tbsp dry sherry
- 1 ½ tsps bean sauce
- 1 tbsps soy sauce
- 1 tsp sugar
- 1 tbsp lard
- 1 tsp cornstarch, dissolved in 3 tbsps stock or water
Directions:
- Rub the pork with 1 ½ tbsps of oil. Mix together the hoisin sauce, sherry, soy bean sauce, soy sauce and sugar in a bowl. Heat the remaining oil in a wok or pan over high heat. Add the pork and stir-fry over high heat for 2 minutes. Drain the pork and set aside. Discard the cooking oil from the wok or pan.
- Add the lard to the pan and melt over moderate heat. Add the soy bean sauce mixture and stir well. Add the cornstarch mixture and cook, stirring until thickened.
- Return the pork to the pan and quick-fry, stirring for 1 minute. Serve hot on a bed of shredded lettuce, if liked.
