Chinese Recipe : Foochow Pork
|

This is an Eastern Chinese recipe
Ingredients:
- 2 lbs fresh pork sides
- 2 tbsps dry sherry
- 2 tbsps soy sauce
- 4 eggs, beaten
- 1 cup lard
- 1 tbsp sugar
- ½ tsp five-spice powder
- 1 head lettuce, separated into leaves
- 1 tbsp sesame oil
- Pepper ring and parsley sprigs to garnish
Directions:
- Cut the pork, through the skin and fat, into 1 ½ inch squares. Place in a bowl with the sherry and soy sauce and leave to marinate for 10 minutes. Drain, reserving the marinade. Mix the pork with the beaten eggs.
- Melt the lard in a deep pan. Add the pork mixture and fry until golden. Lift out with a perforated spoon and place in a large heatproof bowl.
- Pour over the marinade together with the sugar and five spice powder. Mix well, then place in a steamer; steam for 1 hour.
- Place on a bed of lettuce and sprinkle with the sesame seed oil. Top with the garnish.
