Boil the potatoes in a saucepan till thoroughly cooked. Peel and mash into a puree.
Mince the pork in a food processor. Clean and dice the onions finely.
Place the potatoes, pork, onions and 1 egg into a big bowl. Stir in the seasoning to mix well. Shape into small patties.
Beat the other egg for later use.
Dust a little flour on to each patty then toss in the beaten egg and coat evenly with the breadcrumbs. Bring 2 tbsp oil to boil and slice in the patties to shallow fry till both sides are golden brown. Repeat the process till the mixture has been finished.
