Chinese Recipe : Pork Tenderloin Stir-Fry
|

Serves 4
Ingredients:
- 1 lb. pork tenderloin
- 1 tbsp. vegetable oil
- 1/2 tsp. salt
- 1 small onion, sliced, separated into rings
- 3 small zucchini, cut into thin slices
- 1 medium green pepper, cut into thin strips
- 3 medium carrots, cut into thin slices
- 1 tbsp. soy sauce
- 1 clove garlic, minced
Directions:
- Cut pork tenderloin into 1/4-inch thick slices.
- Quickly brown pork slices, one-half at a time, in hot oil in a wok or large skillet, stirring constantly. Remove from wok. Sprinkle pork with salt.
- Reduce heat; add onion, zucchini, green pepper, carrots, soy sauce and garlic; mix well. Cook over medium heat 5-6 minutes, stirring occasionally.
- Return pork to wok and heat thoroughly.
