Chinese Recipe : Stewed Spare Rib with Mixed Spice

Ingredients:
- 2 sticks meaty spare rib, about 600g
Spices:
- 3 star anise
- 3 cm ginger, crushed
- 2 stalks spring onion
- 2 liter water
- 3 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 ½ tbsp sugar
- 3 tbsp Shaoxing wine
Seasoning:
- 2 tbsp plum sauce
- 1 tbsp chili sauce
- 1 tbsp cornflour water, for thickening
Directions:
- Cook meaty spare ribs in boiling water for 5 minutes. Dish and rinse.
- Bring spices to boil, add in spare ribs and simmer at low heat for 45 minutes or until tender. Dish up.
- Bring the remaining gravy and seasoning to boil. Thicken with corn flour water and pour over spare ribs. Serve.
