Famous Authentic Chinese Recipe : Stir-Fried Pork Liver

Ingredients:
- 300 g pork liver, thinly sliced
- 2 tbsp Chinese rice wine
- 2 tsp oil
- 2 tsp finely chopped garlic
- 3 cm ginger, finely sliced
- 1 spring onion, cut in 3 cm lengths
- ½ red chilli, de-seeded and sliced (optional)
- 1 tsp chicken stock powder
- 1 tsp light soy sauce
- ½ tsp sugar
- 1 tsp cornflour, mixed with water
Directions:
- Marinate liver with wine for about 5 minutes.
- Heat oil and fry the garlic for a few seconds, then add drained liver, ginger, spring onion and chili (if using).
- Stir fry over high heat for a few seconds.
- Add stock powder, soy sauce and sugar and continue stir frying for 1-2 minutes, until the liver is cooked.
- Thicken with cornflour and serve immediately.
