Chinese Recipe : Baked Chicken Livers

Ingredients:

  • 12 oz chicken livers
  • ½ oz ginger
  • 2 shallots
  • 2 garlic cloves
  • 3 tbsp honey
  • 1 tsp sesame oil

Marinade:

  • 2 tbsp dark soy
  • 2 tbsp soy sauce
  • 1 tbsp red food coloring (optional)
  • 2 tbsp sugar
  • 1 tbsp rose wine or cooking sherry

Directions:

  1. Wash and towel dry the chicken livers.
  2. Chop the ginger, shallots and garlic coarsely, then blend into a puree with a food processor. Scrape the puree on to a saucer.
  3. Mix the marinade with the puree and stir until the sugar dissolves. Coat the liver thoroughly with the mixed marinate. Leave aside to soak for an hour.
  4. Preheat the oven to 400 degree Fahrenheit (Gas Mark 6).
  5. Line an oblong baking tray with tin foil and top it with a greased rack.
  6. Arrange the livers on the rack and place it in the middle shelf of the oven to bake for 10 minutes. Remove and coat with the honey. Turn the livers and bake it in the oven for a further 10 minutes. Turn off the heat and remove the livers on to a chopping board. Brush with sesame oil then slice into thick pieces and arrange on a platter. Serve hot or cold.
