Chinese Recipe : Chicken with Chinese Mushroom
|

Serves 4 to 6
Ingredients:
- 1 chicken drumstick, cut into bite-size pieces
- 2 chicken wings, cut in two
Seasoning:
- 2 tbsp oyster sauce
- ½ tsp sugar
- 1 tsp sesame oil
- 2 drops thick soy sauce
- 2 oz. Chinese mushrooms, washed and soaked, cut and remove the stalks
- 2 oz. young ginger, sliced thinly
Directions:
- Marinate chicken with seasoning for at least 10 minutes.
- Place 1cup of water and Chinese mushrooms in a pan, cover and simmer for 10 minutes. Drain and discard the water.
- With 2 tbsp oil in a wok, fry the shredded ginger till fragrant. Add in the seasoned chicken. Stir fry until well coated.
- Add in the mushrooms and cover. Cook on low heat for 10 minutes. Turn off the fire and allow to stand for 10-15 minutes before serving.
- Garnish with scallions, sliced into 1 inchlengths.
