Chinese Recipe : Chicken with Dried Chillies


  • 150 g chicken breast
  • ½ tsp salt
  • 1 egg white
  • 2 tbsp Chinese rice wine
  • 2 tsp cornflour
  • Oil for deep frying
  • 1 tsp finely chopped garlic
  • 1 tsp finely chopped ginger
  • 1 tbsp black soy sauce
  • 1 tbsp white rice vinegar
  • 1 tsp sugar
  • 2-3 dried chillies, cut in 1 cm pieces, dry-fried until crisp and lightly browned
  • 1 tbsp finely sliced spring onion
  • 2 tbsp fried peanuts, skinned


  1. Score chicken breast with diagonal cuts about 0.5 cm apart, taking care not to cut right through the flesh. Cut the breast into pieces about 0.5 cm x 2 cm.
  2. Mix well with salt, egg white, wine and cornflour. Set aside for 2-3 minutes while heating oil for deep frying.
  3. Deep fry chicken over very high heat for 30 seconds, drain and set aside.
  4. Tip out all but 1 tsp of oil from the wok
  5. Stir fry the garlic and ginger for a few seconds, then add soy sauce, vinegar and sugar.
  6. Stir well and put in the chicken, dried chillies and spring onion and stir fry for 3-4 minutes.
  7. Stir in the fried peanuts and serve immediately.
