Mince the ginger, garlic and shallots. Put into a mixing bowl and stir well with the above marinade (except the sesame oil). Immerse the chicken to stand for 30 minutes then blend in the sesame oil to marinate for a further 30 minutes.
Wash, deseed and dice the cucumber. Wash and dice the tomatoes into similar size to the cucumber.
Skewer a piece each of chicken, cucumber and tomato alternately. Put on a greased rack in a baking tray and bake for 5 minutes in a preheated 400 degree Fahrenheit (Gas Mark 6) oven. Remove and brush with the oil. Return into the oven to bake for another 5 minutes until golden brown. Serve hot.
