Chinese Recipe : Fried Chicken with Scallion Sauce

Ingredients:

  • 1/2 chicken or chicken legs (about 1.3 lbs)
  • 1/2 Tablespoon Soy Sauce
  • Oil for frying

Seasonings:

  • 1/4 cup chopped scallion
  • 1 Tablespoon chopped ginger root
  • 1.5 Tablespoon sugar
  • 2 Tablespoons white vinegar
  • 2.5 Tablespoons soy sauce
  • 1 teaspoon sesame oil

Directions:

  1. Wash the chicken and pat it dry. Rub soy sauce on the exterior and in the cavity of the chicken. Combine the seasonings in a bowl (scallion sauce).
  2. Heat the wok then add oil. Fry the chicken over high heat for 10 minutes, or until the skin is golden, crispy, and the meat is cooked. Remove the chicken; cut it into pieces. Place them on a serving plate; pour the scallion sauce (seasonings) over the chicken.

* Red hot peppers or minced garlic may be added to the seasonings if desired.

* If cooked chicken is being used, shorten the frying time. Remove the chicken when the skin is crispy.
