Chinese Recipe : Fried Chicken with Scallion Sauce

Ingredients:
- 1/2 chicken or chicken legs (about 1.3 lbs)
- 1/2 Tablespoon Soy Sauce
- Oil for frying
Seasonings:
- 1/4 cup chopped scallion
- 1 Tablespoon chopped ginger root
- 1.5 Tablespoon sugar
- 2 Tablespoons white vinegar
- 2.5 Tablespoons soy sauce
- 1 teaspoon sesame oil
Directions:
- Wash the chicken and pat it dry. Rub soy sauce on the exterior and in the cavity of the chicken. Combine the seasonings in a bowl (scallion sauce).
- Heat the wok then add oil. Fry the chicken over high heat for 10 minutes, or until the skin is golden, crispy, and the meat is cooked. Remove the chicken; cut it into pieces. Place them on a serving plate; pour the scallion sauce (seasonings) over the chicken.
* Red hot peppers or minced garlic may be added to the seasonings if desired.
* If cooked chicken is being used, shorten the frying time. Remove the chicken when the skin is crispy.
