Famous Authentic Chinese Recipe - Salt Roasted Chicken East River Style

Ingredients:
- 1 dressed pullet, about 840g
Seasonings:
- 80g lard
- 2 ½ g fine stock
- 3 tsp salt
- 1 tbsp sesame oil
- A dash of MSG
Directions:
- Mix lard (60g) with salt, sesame oil and MSG to form a kind of gravy. Hold this mixture in a pottery basin.
- Clean pullet and put in fine stock or boiling water. Simmer until the chicken is done.
- Tear chicken into 3 separated parts: bone, skin and flesh (flesh should be shredded apart). Soak these parts in the basin of mixture thoroughly.
- When serve, place the bones at the bottom, the meat in the middle and the skin on top.
- Follow the main dish with 3 little saucers of salt fried ginger.
