Famous Authentic Chinese Recipe - Sauté Chicken balls with Serving Sauce
320g chicken without bones
1 chicken egg white
Adequate onion lengths
10 slices ginger carved like flowers
1 red pepper
1 green pepper
Adequate amount each of pepper, sesame oil, Shaoshing wine and cornstarch solution
4 tbsp starchy soup
840g lard (40g consumed)
Cut the chicken into balls, put them in a bowl, mix them with egg white and then mix them with cornstarch solution.
Mix starchy soup, cornstarch solution, sesame oil and pepper powder into serving sauce.
Heating the pot over medium heat, pour oil in to spread all over the pot and pour it back into oil container; pour 840g of oil in, heat it until 50 percent hot, scald the chicken balls in it (Scattering them with chopsticks to prevent them from sticking together) until just cooked and pour them into a bamboo strainer to drain oil away.
Put the pot over the fire, put ginger slices, onion, fresh mushrooms and chicken balls in, sprinkle Shaoshing wine in, stir serving sauce in, sprinkle hot oil in and stir fry them well for serving.
