Chinese Recipe : Steamed Chicken with Chinese Sausages

Ingredients:

  • 10 oz chicken thigh or breast
  • 2 oz fresh mushrooms
  • 2 Chinese sausages or pork sausages
  • 1 tbsp shredded ginger
  • 1 tbsp shredded spring onions

Chicken marinade:

  • 1 tsp ginger juice
  • 1 tsp wine

Seasoning:

  • ¼ tsp salt
  • 1 ½ tsp sugar
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • A pinch of pepper
  • 1 tsp cornflour
  • 1 tbsp water
  • 1 tsp sesame oil

Directions:

  1. Clean, debone and cut the chicken into bite sized pieces. Mix in the above marinade and leave aside for 20 minutes. Blend in all the seasoning to marinate for another 20 minutes.
  2. Wash, trim and slice the mushrooms into thick pieces. Wash and slice the sausages.
  3. Place the marinated chicken mushrooms and sausages on a platter. Add an extra tsp of water and 1 tbsp of oil to mix well. Arrange in a steamer to cook for 12 minutes over moderate heat. Remove and sprinkle the shredded ginger and spring onions on top. Serve hot.
