Ingredients:
11 oz. pumpkins
10 duck’s web
1 tsp fermented black beans
1 tsp minced garlic
2 slices ginger
2 sprigs scallions
Seasoning for ducks webs:
2 tbsps oyster sauce
2 cups water
1 tsp soy sauce
1/2 tsp sugar
Seasoning:
1/4 tsp salt
1/2 cup water
Sauce:
1/2 tsp. cornstarch
3 tbsps water
Dash of sesame oil
Directions:
1. Wash and scald duck’s webs for a while. Remove and season with 1 tbsp of dark soy sauce. Then deep fry until golden brown and dish up.
2. Stir fry ginger with 1 tbsp of oil until fragrant. Sizzle wine. Add duck’s webs and seasoning for them. Stew over low heat until tender. Leave to cool, chop up and dish up.
3. Peel, see pumpkin and cut into pieces. Section scallion.
4. Stir fry minced garlic and fermented black beans with 2 tbsps of oil until fragrant. Add pumpkin and seasoning. Simmer until pumpkin is tender. Put in scallion. Stir in sauce. Dish up and serve.
