Chinese Recipe : Peanut and Oyster Porridge

Serves 2 to 3
Ingredients:
- 25g dried oysters
- 50g raw peanuts
- ½ cup rice
- 1 inch piece ginger, shredded
- 1 tsp sesame oil (optional)
- 2 cups water
- Salt and pepper to taste
Directions:
- Wash oysters, peanuts, and rice. Soak in a cooking pot with 2 cups water for 1 to 2 hours (to soften them and reduce cooking time)
- Put to boil and then simmer gently for about 30 minutes until peanuts are tender and rice is broken up. Add salt and pepper to taste.
- To serve, sprinkle with sesame oil and shredded ginger.
