Chinese Recipe - Abalone and Mushroom in Oyster Sauce

Ingredients:

  • 1 can abalone (retain ½ cup of the liquid)
  • 10 medium sized dried Chinese mushrooms (soaked and stalks removed)
  • 3 tbsp vegetable or corn oil
  • 1 head lettuce (leave separated & washed)
  • 2 tsp cooking wine
  • ¼ tsp ground white pepper
  • ½ cup chicken stock

Sauce ingredients:

  • 3 tbsp oyster sauce

*Blend the following ingredients:

  • 1 tsp dark soy sauce
  • ½ tsp sugar
  • ½ tsp sesame oil
  • 1 tbsp cornstarch
  • 2 tbsps water

Directions:

  1. Arrange lettuce leaves on a plate and leave aside.
  2. Cut abalone into ¼ inch thick slices.
  3. Heat the 3 tbsp oil in a wok. Add wine and simmer briefly before adding abalone liquid, white pepper, chicken stock and mushrooms.
  4. Braise mushrooms 5 minutes or till tender.
  5. Stir in blended sauce ingredients and bring to the boil.
  6. Add abalone slices last. Simmer 30 seconds and remove to plate covered with lettuce. Serve hot.
