Chinese Recipe - Boiled Abalone Slices with Longjing Tea

This is a famous authentic Chinese recipe.

Ingredients:

  • 2 tins abalones
  • 12g Longjing tea (leaves)
  • 640g clear soup
  • 80g bean sprouts

Seasoning:

Adequate amount each of salt, cooking wine, MSG and pepper

Directions:

  1. open the tins to take the ablones out (leaving the juice for use), tear their skirts off, cut them into slices 1 mm thick and soak them in the original juice.
  2. Soak the tea leaves in boiling water, pour the water away, pour new boiling water in to soak it for a while and take about 80g of tea water for use. Put the tea leaves in a small container, invert it in the centre of a plate for use and pour tea water into the plate.
  3. Pour clear soup into the pot, add the abalone slices, salt, pepper, cooking wine and MSG to season the soup. Bring the mixture to boil, sow bean sprouts in and pour the mixture into the plate around the bowl for serving after seasoning it well. When eating, don’t touch the bowl lest the tea leaves should flow into the dish.
