Famous Authentic Chinese Recipe - Braised Conpoy Scallops with Broccoli

Ingredients:
- 6 dried scallops / conpoys
- 150 gm fresh scallops
- 80 gm broccoli, cut florets
- 15 gm carrots, sliced
- ½ tsp chopped garlic
- 10 gm ginger, minced
Seasoning:
- 1 tsp oyster sauce
- ½ tsp salt
- Pinch of pepper
- Dash of sesame oil
- 2 tbsp water
Thickening:
Directions:
- Soak scallops then steam for 20 minutes. Remove and drain.
- Heat wok with water, add in 2 tbsp of oil, blanch broccoli, cauliflower and carrot. Dish and drain.
- Heat wok with 1 tbsp of oil, stir fry chopped garlic and ginger till fragrant. Add in scallops, conpoys, broccoli, cauliflower and carrot. Stir in seasoning, bring to the cook. Stir in thickening, mix well and dish up.
