Chinese Recipe - Braised Sea Cucumbers in Brown Sauce

This is a famous authentic Chinese recipe.

Ingredients:

  • 240g sea cucumbers, raised in water
  • 12 stalks (small) leaf mustard

Seasonings:

  • 80g chicken soup
  • Adequate amount each of soy sauce, sugar, Shaoxing wine, onion, ginger and MSG
  • A dash of cornstarch solution
  • 40g lard

Directions:

  1. Halve each thoroughly raised sea cucumber longitudinally, wash them clean, scald them thoroughly in boiling water, scoop them out and drain; heating cooked lard in a clean pot until 70 percent hot, deep-fry the sea cucumbers for a wile and scoop them out.
  2. Wash the stalks of leaf mustard clean, trim leaves off the stems, scald the stems until rawness is removed and cool them in cold water.
  3. heating the pot and pouring oil in, sauté onion and ginger, fry leaf mustard stems for a while, add soy sauce, chicken soup, Shaoxing wine and MSG. Add the sea cucumber to (1), stir sugar in and bring to boil, remove onion and ginger.
  4. Stir in cornstarch solution in, sprinkle cooked lard in and place them in a plate.
  5. Lay thee sea cucumbers in the centre of the plate, put leaf mustard stems around them and pour seasoning sauce over for serving.
