Famous Authentic Chinese Recipe - Crisp Deep Fried Oysters

Ingredients:

  • 12 large fresh oysters
  • 4 lettuce leaves
  • A dash of coriander
  • 1 small saucer each of xanthoxylum salt and Worchestershire sauce

Seasonings:

  • 2 tsps chopped ginger
  • 1 tbsp each of Shaoxing wine and potato starch
  • 1 tsp vinegar
  • ½ tsp pepper
  • 6 tbsp flour
  • ½ tsp salt
  • 1 tsp baking powder
  • Adequate amount of water
  • 1 tbsp lard

Directions:

  1. Rub 1 tbsp each of salt and potato starch evenly onto the fresh oysters, wash them clean, drain, put them in a bowl, add the seasoning A to mix well and marinate them 20 minutes.
  2. Heating a clean pot and pouring 2 ½ cups water in, bring it to boil, scald the marinated oysters for a while, scoop them out and wipe water away.
  3. Mix the flour, salt and baking powder of the B ingredients, pour water in slowly, stir them into thick paste and add lard to stir well into crisp coating paste.
  4. Coat the (2) fully with (3), throw them into half-boiling oil, reduce the fire to mild heat, deep-fry the oysters until golden yellow, scoop them out, drain oil away, lay them in a plate spread with lettuce leaves and sow washed coriander over. Serve them with xanthoxylum salt and Worchesthershire sauce.
