Chinese Recipe - Curry Sea Cucumber

Ingredients:
- 2 soaked sea cucumber
- 1 cup onion, cut
- 1 cup eggplant, cut
- 1 cup potato, cut
- some crushed garlic.
Seasoning:
- 2 Tbsp curry sauce
- 4 oz chicken stock
- 2 Tbsp coconut cream
- 1/2 tsp salt
- 1/2 tsp sugar
Directions:
- Cut sea cucumber into pieces; blanch briefly in boiling water with green onion and ginger. Remove sea cucumber and set aside.
- Stir-fry onion, eggplant, and potato at high heat, add sea cucumber and curry paste and keep frying for a few minutes, then add seasoning and cook until the sauce thickens
