Famous Authentic Chinese Recipe - Kung Po Mantis Shrimp

Ingredients:

  • 350 gm squilla (mantis shrimp) meat
  • 1 green capsicum, triangled
  • 1 red chili, wedge
  • ½ onion, wedged
  • ½ tsp chopped garlic
  • 1 stalk spring onion, sectioned
  • 5 gm dried chili
  • 15 gm ginger, sliced
  • 20 gm deep fried cashew nuts
  • ½ tsp salt
  • 2 tbsp cornflour
  • 1 egg
  • 100 gm frying powder

Seasoning:

  • 2 tsp vinegar
  • ½ tsp dark soy sauce
  • 1 tsp oyster sauce
  • 1 tsp sugar
  • 3 tbsp water
  • 1 tsp Shaoxing wine
  • Pinch of pepper
  • Dash of sesame oil

Thickening:

  • ½ tsp cornflour solution

Directions:

  1. Clean squilla meat, drain well. Add in little salt to marinate for 15 minutes. Coat with frying powder, deep fry until golden brown.
  2. Cut dried chilli to section and blanch in hot water and drain well.
  3. Heat up oil, blanch capsicum, chilli and onion wedges in hot oil. Dish and drain.
  4. Heat up 1 tbsp oil, sauté ginger garlic and dried chili, return squillas meat, capsicum, chilli and onion, then add in seasoning and spring onion dices to stir-fry.
  5. Pour in thickening and stir well. Dish up and serve.
