Chinese Recipe - Steamed Dried Oysters with Dried Moss

This is a famous authentic Chinese recipe.

Ingredients:

  • 240g large dried oysters
  • 8g dried moss
  • 240g flank pork

Seasoning:

A dash each of chopped garlic, ginger, onion and dried tangerine peel
Adequate amount each of chicken fat, oyster sauce, soy sauce, MSG, salt, sugar, wine, pepper powder and starch

Directions:

  1. Select the clean part of the dried moss, wash it clean and soak it in cold water; wash the dried oysters clean with lukewarm water, soak them in boiling water for 2 hours, scoop them out and filter the water for soaking with clean gauze for use.
  2. Wash the dried oysters clean with lukewarm water, pour the water for soaking them in (1) into the pot, add the dried oysters, flank pork and dried moss, boil them for half an hour, take them out, leave the soup for use, skin the flank pork and cut into 12 pieces.
  3. Heating oil in the pot, sauté chopped garlic and ginger, sprinkle wine in, put dried tangerine peel, the soup of (2), oysters, flank pork, dried moss and seasonings in, bring them to boil, reduce the fire to mild heat, braise them for half an hour, scoop them out, put the dried moss at the centre of an inverting bowl, then place the oysters and flank pork in the bowl, pour the soup in, steam them in the steamer for one hour, take the bowl out, pour the soup away, invert the bowl to place the contents in a plate.
  4. Pour the soup into the pot, stir starch solution in, sprinkle chicken fat in to stir well, remove the inverting bowl and pour the seasoning sauce over the oyster mixture.
