Chinese Recipe - Stir Fried Squid with Broccoli

This is an Eastern Chinese recipe

Ingredients:

  • 1 lb squid
  • 2 tsp salt
  • 1 tbsp dry sherry
  • 1 tbsp cornstarch
  • 6 tbsps lard
  • 5 scallions, cut into 1 inch pieces
  • ½ lb broccoli, broken into florets
  • 1 tsp sesame oil (optional)

Directions:

  1. Clean the squid, discarding the head and transparent back bone. Cut into thin slices, then blanch in boiling water for 2 to 3 minutes. Drain the squid and place in a bowl with 1 tsp of the salt, the sherry and cornstarch. Leave to marinate for 10 minutes.
  2. Melt half the lard in a pan. Add the scallions and squid and stir-fry briskly for about 2 minutes. Transfer the squid mixture to a serving plate and keep hot.
  3. Melt the remaining lard in a clean pan. Add the broccoli, the remaining salt and a little water if the mixture seems too dry. Stir-fry until just tender.
  4. Arrange the broccoli spears around the edge of the squid. Sprinkle the sesame oil if used, over the squid and serve hot.
