Chinese Recipe - Broad Bean Soup with Sea Cucumber

This soup is great in improving appetite
Ingredients:
- 3 oz. dried broad bean
- 10 oz presoaked sea cucumber
- 5 oz lean pork
- 2 slices ginger
- 1 stalk scallion
- 1/4 dried tangerine peel
Marinade:
- ¼ tsp salt
- ¼ tsp cornstarch
- 1 tsp oil
Seasoning:
Directions:
- Soak broad beans for 2 days. Shell, wash and drain.
- Remove entrails from sea cucumber and wash. Blanch in boiling water together with ginger and scallions. Clean and cut into small pieces.
- Wash and slice lean pork. Mix with marinade. Soak and clean dried tangerine peel.
- Boil suitable amount of water together with dried tangerine peel. Add broad bean and sea cucumber. Cook for 10 minutes. Put in pork slices and bring to a boil. Stir in seasoning. Serve hot.
