Chinese Recipe - Broad Bean Soup with Sea Cucumber
This soup is great in improving appetite
Ingredients:
3 oz. dried broad bean
10 oz presoaked sea cucumber
5 oz lean pork
2 slices ginger
1 stalk scallion
1/4 dried tangerine peel
Marinade:
¼ tsp salt
¼ tsp cornstarch
1 tsp oil
Seasoning:
Salt
Directions:
Soak broad beans for 2 days. Shell, wash and drain.
Remove entrails from sea cucumber and wash. Blanch in boiling water together with ginger and scallions. Clean and cut into small pieces.
Wash and slice lean pork. Mix with marinade. Soak and clean dried tangerine peel.
Boil suitable amount of water together with dried tangerine peel. Add broad bean and sea cucumber. Cook for 10 minutes. Put in pork slices and bring to a boil. Stir in seasoning. Serve hot.
