Chinese Recipe - Chestnut Duck Soup

This soup improves weakness/fatigue in women, nourishes the stomach and kidneys. It also reduces phlegm and alleviate cough. Chestnuts are difficult for digestion and hence need to be parboiled long enough till soft and tender.

Ingredients:

  • 1 duck (about 3 ¼ lb)
  • ¾ lb chestnuts (shells removed)
  • 1 slice tangerine peel
  • 4 slices ginger

Seasoning:

  • Salt

Directions:

  1. Wash and chop up duck. Sauté ginger. Add duck and fry gently, dish up. Blanch in boiling water and drain.
  2. Soak chestnuts in boiling water for a while and remove skin. Soak and clean tangerine peel.
  3. Boil suitable amount of water. Add duck, dried tangerine peel, chestnuts and ginger. Bring to a boil. Then parboil over low heat for 3 hours. Stir in seasoning. Ready to serve. Remove duck and cut into serving pieces. Serve with oyster sauce or soy sauce.
