Chinese Recipe : Cucumber and Pork Soup

Light, delicious and so easy and quick to make.

Serves 4

Ingredients:

  • 5 ¾ cup water
  • 1 tsp salt
  • 1 tbsp soy sauce
  • 8 oz. pork fillet (tenderloin), cut into very thin strips
  • 2 medium cucumbers, peeled, halved lengthways, seeded and cut into ½ inch slices

Directions:

  1. Pour the stock, salt and soy sauce into a large pan and stir in the pork strips. Bring to the boil over moderate heat and cook for 10 minutes.
  2. Add the cucumbers to the pan and return to the boil. Cook for 3 minutes, or until the cucumbers are translucent.
  3. Transfer the soup to a tureen and serve at once.
