Chinese Recipe : Cucumber and Pork Soup
|

Light, delicious and so easy and quick to make.
Serves 4
Ingredients:
- 5 ¾ cup water
- 1 tsp salt
- 1 tbsp soy sauce
- 8 oz. pork fillet (tenderloin), cut into very thin strips
- 2 medium cucumbers, peeled, halved lengthways, seeded and cut into ½ inch slices
Directions:
- Pour the stock, salt and soy sauce into a large pan and stir in the pork strips. Bring to the boil over moderate heat and cook for 10 minutes.
- Add the cucumbers to the pan and return to the boil. Cook for 3 minutes, or until the cucumbers are translucent.
- Transfer the soup to a tureen and serve at once.
