Chinese Recipe - Double-boiled Fish Maw and Chicken Soup

Ingredients:

  • 1 free-range chicken
  • 5 black mushrooms, soaked
  • 100g yu zu
  • 10 red dates, seeded
  • 1 liter boiling water
  • 30g dried fish maw, soaked until soft
  • Salt to taste

Directions:

  1. Blanch chicken in boiling water for 5 minutes. Dish up, clean and drain well.
  2. Put chicken, black mushrooms, yu zu, red dates and boiling water into a double boiler. Double-boil for 2 hours.
  3. Add in dish maw and continue to double boil for another 30 minutes. Add salt to taste. Serve hot.
