Chinese Recipe - Lotus Root Soup with Mung Beans and Beef Brisket

Ingredients:

  • 1 1/3 lb beef brisket
  • 1 1/3 lb lotus roots
  • 3 oz mung bean
  • ¼ dried tangerine peel

Seasoning:

  • Salt

Directions:

  1. Wash and blanch beef brisket in boiling water for a while. Remove and rinse.
  2. Wash, skin and section lotus roots. Wash mung beans. Soak and clean dried tangerine peel.
  3. Boil suitable amount of water together with dried tangerine peel. Put in rest of ingredients. Boil for 20 minutes. Then simmer over low heat for 2 ½ hours until beef brisket is tender. Stir in seasoning. Ready to serve. Dish up beef brisket and lotus roots slice. Serve with light soy sauce.
