Chinese Recipe - Lotus Root Soup with Mung Beans and Beef Brisket

Ingredients:
- 1 1/3 lb beef brisket
- 1 1/3 lb lotus roots
- 3 oz mung bean
- ¼ dried tangerine peel
Seasoning:
Directions:
- Wash and blanch beef brisket in boiling water for a while. Remove and rinse.
- Wash, skin and section lotus roots. Wash mung beans. Soak and clean dried tangerine peel.
- Boil suitable amount of water together with dried tangerine peel. Put in rest of ingredients. Boil for 20 minutes. Then simmer over low heat for 2 ½ hours until beef brisket is tender. Stir in seasoning. Ready to serve. Dish up beef brisket and lotus roots slice. Serve with light soy sauce.
