Chinese Recipe - Pacific Clam Soup

Serves: 6
Ingredients:
- 1/3 lb chicken fillet, sliced into thin strips
Ingredients A:
- 1 tsp soy sauce
- ½ tsp cornstarch
- ½ tsp sugar
- ½ tsp black pepper
- 4 ¼ cups chicken stock
- 4 pcs Chinese mushrooms, soaked and washed, cut into strips
- 1 can of pacific clams
Directions:
- After seasoning the chicken with ingredients A for 15 minutes, mix in 1 tsp sesame oil.
- Heat 1 tbsp oil in a saucepan, fry ginger for a minute. Pour in the stock and bring to the boil.
- Add in Chinese mushrooms and seasoned chicken. Cover and allow to simmer for 8 to 10 minutes.
- Just before serving, stir in the pacific clams. Garnish with spring onions and Chinese celery. Serve hot.
Do not overcook the pacific clams as it will turn rubbery.
