Chinese Recipe - Papaya Spareribs Soup

Note: this dish has a northern Chinese flair. This is a delicious and aromatic dish.
Ingredients:
- 1-1/3 lb papaya
- 1-1/3 lb spare rib
- 2 tbsp sweet almond (Chinese Apricot Kernel, sweet ones = "south apricot kernel")
- 1 tsp bitter almond (Chinese Apricot Kernel, bitter ones = "north apricot kernel")
- 2 slices ginger
Directions:
- Wash and halve papaya. Core, remove seeds and cut into thick shreds.
- Wash and parboil spare rib for 5 minutes. Remove and rinse.
- Put 9 cups of water into the pot, then add papaya, spare rib, sweet and bitter almonds, together with ginger, bring to boil. Cook over mild heat for 3 hours. Season with salt. Serve hot.
