Chinese Recipe - Vegetarian Nori Soup

Serves 4 to 6
Ingredients:
- 1 pc nori sheet, soaked and washed in water
- 3 ½ oz. frozen green peas
- 4 ¼ cup of mushroom stock
Ingredients A:
- 4-5 Chinese mushrooms, soaked and cut in strips
- 15 pcs button mushrooms, sliced
- 3 ½ oz bamboo shoots, finely shredded
- 3 ½ oz carrot, finely shredded
- 1 oz. wood ears, soaked and shredded
Seasoning:
- ½ tsp sugar
- ¼ tsp pepper
- 1 tsp salt
- 2 tsp sesame oil
Directions:
- Reheat the mushroom stock in a Dutch Oven. Add in ingredients A and simmer till mushrooms are tender.
- Add the nori sheet, frozen green peas and seasoning. Allow to simmer for 3 minutes.
- Serve in individual bowls. Garnish with Chinese celery.
For a non-vegetarian soup, add 150g chicken strips seasoned with salt, pepper and a little cornstarch.
