Chinese Recipe : Tofu with Spicy Meat & Vegetables

This is a Szechuan dish
Serves 6
Ingredients:
- ½ up peanut oil
- 1 garlic clove, crushed
- 1 3-inch fresh ginger root, peeled and finely chopped
- 4 scallions, finely chopped
- 4 Chinese dried mushrooms, soaked in cold water for 30 minutes, drained and chopped
- 1 tsp red pepper flakes
- 2 dried red chilies, chopped
- 6 oz. ground beef
- 2 tbsp. chicken stock
- 3 cakes fresh tofu, mashed
- 1 tbsp. cornstarch mixed with 2 tbsp. chicken stock
Directions:
- Heat the oil in wok.
- Add the garlic, ginger, scallions and mushrooms, and stir fry for 3minutes.
- Stir in the red pepper flakes and chilies and stir fry for a further 1 minute.
- Add beef and fry until no longer pink.
- Add soy sauce and stock and bring to boil, stirring constantly.
- Stir in mashed tofu and stir fry for 5 minutes.
- Add cornstarch mixture and cook, stirring constantly until sauce thickens.
- Serve at once.
